Ingredients:
- 1 Tbspn Morella Grove Extra Virgin Olive Oil
- 4 rashers finely chopped bacon
- 2 medium onions finely chopped
- 2 carrots finely chopped
- 2 celery sticks finely chopped
- 2 garlic cloves finely chopped
- 2 sprigs rosemary finely chopped
- 500g beef mince
Bolognese sauce ingredients
- 2 x 400g Mutti finely chopped tomatoes ( can be any brand)
- 1 cup chopped basil
- 1 tspn fresh or dried oregano
- 2 fresh bay leaves
- 300g tomato Passata ( my favourite brand La Russolillo)
- 1 beef stock
- 125ml red wine
- 75g grated parmesan cheese
Method
- Heat Olive Oil in a large saucepan
- Add bacon and fry until golden and crisp
- Reduce heat and add onions, carrots, celery, garlic and rosemary. Stir and fry until all ingredients are soft.
- Increase heat to medium and add mince and cook. Stir until meat is browned all over.
- Add tins of tomatoes, basil, oregano, bay leaves, passata sauce, beef cube and red wine. Stir with a wooden spoon.
- Bring to the boil and reduce to a simmer. Cover with lid and cook for 90 minutes. Stir occasionally
- Add grated parmesan cheese and salt and pepper for seasoning
Serve with spaghetti and add extra basil and cheese for garnish
