Cake Recipe:
* 1/2 cup of Morella Grove Extra Virgin Olive Oil
* 1 & 1/4 cups of caster sugar
* 3 eggs
* 1 tsp vanilla essence
* 1/3 cup of freshly squeezed lemon juice
* Rind from 3 lemons
* 1 tsp baking soda
* 2 tsp baking powder
* 2 cups plain flour
* 1/2 tsp salt
* 2/3 cup of buttermilk
Icing recipe:
* 1/2 cup of freshly squeezed lemon juice
* 1 1/2 cups of icing sugar
Method:
* Preheat oven to 180 C
* Grease cake tin with butter or oil

* Mix Morella Grove extra virgin olive oil together with sugar, using a mixer
* Add eggs, one at a time
* Add vanilla essence, lemon rind and lemon juice

* In a separate bowl, sift together the flour, baking soda, baking powder and salt.

* Then fold the flour mix into the lemon mixture, making sure you are adding only a quarter of the flour mix at a time. After adding half of the flour mix, then add half of the buttermilk, add the rest of the flour mix and the final amount of buttermilk.

* Pour cake mixture into your cake tin
* Bake for 45-50 minutes or until cooked
* Let the cake cool before adding the icing

* Make the icing, slowly add lemon juice to the icing sugar until you get your perfect consistency. Pour over the completely cooled cake.
* Decorate with thyme and lemon rind
