Caramelised baked vegetables

* 300 gms brussels sprouts halved
* 300 gms cut carrots
* 300 gms halved small new potatoes
* 2 large shallots quartered
* 3 tbsp Morella Grove Extra Virgin olive oil
* 3/4 tsp salt
* 1/2 tsp ground black pepper
* 2 tbsp Morella Grove caramelised balsamic vinegar
Add all vegetables to a baking dish with salt and pepper.
Drizzle with olive oil.
Bake in oven at 180 c for 30 minutes. Remove from oven and
drizzle with caramelised balsamic vinegar and bake for
another 10 minutes. Add a extra drizzle of olive oil if needed.
