Cranberry Jam Throw Downs - Perfect for those drop in guests or the kid's lunchbox 😆
Ingredients
1 1/2 cups SR flour
3/4 cup sugar
125grams melted butter
1 egg (beaten)
1 Tsp vanilla
Jar of Morella Cherry citrus jam
1/2 cup shredded coconut
Method
👩🏻🍳 Place flour and sugar in a bowl. Add butter, egg and vanilla and mix with a fork until combined.
👩🏻🍳 Using 2 x spoons dollop batter mix into a lined muffin tray, about 3/4 of the way to the top.
👩🏻🍳 Using a clean spoon place a dollop of Morella cherry citrus jam over top, repeat until muffin tray is full or you run out of batter mixture.
👩🏻🍳 Sprinkle shredded coconut over the top of jam.
👩🏻🍳 Bake in moderate oven for approximately 25 mins.
