Morella Grove Gourmet Peri Peri Air- Fried Salmon with Tomato Rice

Ingredients - 4 servings:

for the salmon
🍅 4 Salmon Fillets
🍅 1 Tbs of Morella Grove Olive Oil
🍅 2 tsp Sea Salt
🍅 1 TBS of Morella Grove Gourmet Peri Peri
🍅 Lemon (cut in wedges to serve)
for the rice
🍅 1 cup of Long Grain Rice
🍅 1 can of diced Tomato (400g)
🍅 1 cup of Vegetable or Chicken Broth
🍅 3 garlic cloves (minced)
🍅 1/2 onion (diced)
🍅 1 TBS of Morella Grove Olive Oil
🍅 1 bay leaf + 1/2 tsp dried oregano
🍅 1/4 cup of chopped fresh parsley (optional)
🍅1 tsp ground Cumin
🍅 1 tsp Smoke Paprika

Method

1. Prepare the Salmon. Pat dry with a paper towel to absorb excess moisture. In a large bowl, rub salmon in Morella Grove Olive Oil. Then coat in Morella Grove Gourmet Peri Peri Sauce. Set Aside to marinate. Pre heat Air-Fryer to 180C.

2. In a large pot add Morella Grove Olive oil. Add the diced onion and cook on medium heat till slightly translucent. Now add the minced garlic.

3. Once onion and garlic have browned, add the rice. Toast for 1-2 minutes.

4. Add can tomato, Broth and dried herbs. Stir it all together. Put on the lid and allow to simmer for 15-20 minutes, on a low-medium heat.

6. Once air-fryer is heated, add your salmon to the baking tray skin side up.
7. Bake for 8 minutes. (13-15 minutes in oven)

8. Turn off heat once rice is cooked and allow to rest for 5 minutes.
Fluff it up with a fork.
9. Serve salmon with a side of rice. Garnish with chopped parsley, lemon and Enjoy!
